Resort at Squaw Creek Hosts Annual BBQ Weekend

The popular BBQ Weekend returns to Resort at Squaw Creek August 19 through 21 with cooking demonstrations, culinary and beverage tastings, and a no-holds-barred gourmet barbeque.  Creative cuisine and beverages galore await attendees at the annual event, including menu items and cooking demonstrations geared towards children. 
 
The weekend festivities kickoff on Friday, August 19 with a sushi and cocktail party on the Six Peaks Grille Deck.  The offerings will feature a number of items from the sea including freshly-shucked Fanny Bay oysters, citrus ponzu marinated ahi tuna (Marshall Islands) makizushi with ripe avocado, strips of carrot, cucumber and sweet soy emulsion rolled in toasted nori, pan-seared spicy scallop makizushi, as well as several other rolls, including a vegetarian creation.
 
On Saturday, July 20, mimosas and Bellinis will be served on the Six Peaks Deck from 8:00 AM to 11:00 AM.  From noon to 2 PM, Resort at Squaw Creek Executive Chef Jason Friendy will put his talents front and center with an interactive cooking demonstration and Spanish-themed lunch featuring several types of paella, including a tasty lobster version, paired with sangria.  During that time, children will be entertained by Chef Adrian Frutos, showing kids how to make homemade pizza dough.  Of course, kids participating in the BBQ Weekend will then create and eat their very own pizzas.   Afterwards, Chef Frutos will make his famous gourmet ice cream to share with the little ones.
 
The signature event of the weekend takes place on Saturday evening, when the Chef’s-Style Gourmet BBQ is unveiled.  A cold buffet rolls out with items such as a Sunshine Salad comprised of fresh grapefruit, watermelon, pineapple, strawberries and grapes, a bleu cheese and tomato salad with beefsteak tomatoes, scallions, and Maytag bleu cheese, and a dish made of fire-roasted vegetables with oven-seared summer squash, bell peppers, red onions, roasted garlic, and grilled asparagus, headline chilled offerings.  Guests will also find New York strip steak with caramelized cipollini onions served at the grill station, with other “Grand BBQ” items such as mesquite-rubbed bone-in chicken, grilled tequila lime marinated shrimp, and house-smoked baby back pork ribs.  Of course, an array of side dishes will complement the gourmet grilled cuisine.
